Bloggers Bake-off.

In a recent post [Creative Minority Report: Daddy Cooks] Patrick Archbold sought to impress his readers with his French Toast made from homemade pumpkin yeast bread.

La dee da.

Well, Pat isn't the only baking blogger, thank you very much !

To show what real baking is, I'm posting a photo of my Pumpkin Muffins along with the recipe :

1 cup all-purpose flour

1/2 cup whole wheat flour

1 teaspoon baking powder

1 cup mashed cooked pumpkin

1/3 cup vegetable oil

2 large eggs

1 teaspoon pumpkin-pie spice

1 teaspoon cinnamon

pinch nutmeg

3/4 cup white sugar

1/2 cup brown sugar

1/2 teaspoon baking soda

1/2 teaspoon salt

preheat oven to 350°F.
Put liners in muffin cups.

Mix both flours with baking powder

Whisk together pumpkin, oil, eggs, pumpkin pie spice, nutmeg, cinnamon, sugars, baking soda, and salt in a large bowl until smooth, then whisk in flour mixture until just combined.

Divide batter among muffin cups (each should be about three-fourths full), then sprinkle tops with cinnamon-sugar mixture.(tsp cinnamon added to 1 tbsp sugar)

Bake until puffed and golden brown and wooden pick or skewer inserted into the center of a muffin comes out clean, 25 to 30 minutes.
